Personally, I love most types of food, most restaurants I enjoy eating at. However, I am broke and can’t keeping going out to eat. Here’s my dilemma: I like food, but I can’t cook at all. Usually I would just boil some mac & cheese, but I have found some simple recipes even I can make. I have three right now, Breakfast, lunch, and diner. These have proved useful to me, so hopefully it can help you out as well.
Starting off with a good breakfast, the Bacon Omelet:
I always love a good omelette in the morning, but making one is a whole new story. To learn how to make an omelette is easy to some, and hard for others. I’ll let you decide where I fall. Let’s just say, making the omelette took many eggs and most turned out scrambled. All in all, it was a good recipe once I got down to it.
- 4 strips bacon
- 1 teaspoon butter
- 3 eggs
- 2 tablespoons water
- 1/4 cup shredded sharp Cheddar cheese
Cook bacon in a skillet over medium-high heat until crisp. Remove with a slotted spoon to paper towels to drain and cool; crumble the bacon and set aside.
Melt the butter in a skillet over medium heat. Cook and stir the onions in the butter until tender, about 10 minutes.
Prepare a 10-inch non-stick skillet with cooking spray and place over a cold burner. Whisk together the eggs and water; pour the egg mixture into the cold skillet. Cover and turn the burner on for medium-low heat. Cook until steam begins to vent from the skillet. Remove the lid. Sprinkle the crumbled bacon, Cheddar cheese, American cheese, salt, and red pepper over the eggs. Spread the onions over the eggs. Gently swirl the skillet in a circular motion to release the omelet and slide it onto a plate. Fold the omelet in half. Allow the cheese to melt, about 2 minutes.
Next we have the main course, Chicken Alfredo:
This recipe took much longer than the omelette. There were many more steps, like cooking the meat and pasta. Also, I am cooking for picky eaters who do not want garlic in a italian dish. In the end it turned out well, but make sure to broil the peppers for longer time. When I did mine, they turned out soggy and did not complement the dish well at all. Overall, I good meal to have with family. Add some garlic bread for a good side dish.
- 1 package fettuccine pasta
- 1 package of heavy cream
- 1 package of parmesan cheese
- ½ stick butter
- Chopped bell pepper (optional)
- 2 chicken breast
Add tortellini to a large pot of boiling salted water and let cook for 8 to 10 minutes. Meanwhile, heat a skillet to medium heat. Cut the chicken into edible bite size pieces. Cook in pan till white. In the skillet, add the cream cheese, butter, cream of chicken soup, Italian dressing, and milk and stir until smooth. Chop peppers to small chunks, then broil till crunchy. Once smooth, add in ham and stir to coat. After the pasta finishes boiling, drain, then add to cream sauce. Stir to evenly coat, add peppers to top and serve warm.
Finally the dessert, Good ol’ ice cream.
You can’t go wrong with some ice cream. This is one of the easiest desserts to make, also it can be what ever you like. I chose to do a simple chocolate brownie ice cream, with whip cream on top. The good thing with ice cream is you can change it to what ever you like.
These recipes are simple and easy to make, so I have eaten these dishes often. I have to say, I would much rather eat any of these than the usual microwave meals I used to eat. Anyway, if you want to make something nice to eat, enjoy.
